I LOVE FOOD!!

The days I work I drive past jungle pita, and for the rest of the day that is all I can think about; so today I am going to blog about food. I love jungle pita I have only been there once, but it was pretty amazing. If any of you have a good receipt for humus? Send that my way!
Tuesday… Mark’s parents were in town and they invited me to go to dinner with them we went to an Italian place. It was great! They were really nice; his mom loves unrefined coconut oil!!!! Wednesday… I had an interview at State Farm, it went really well. So my friend Jake took me to Applebee’s, my salad was amazing! I get to take a drug test Friday and I need to pass a background check, then I am pretty sure I will have the job! YAY something full time, paid vacation. Sarah and I are thinking about moving in together in September, a bit closer to where I will be working if I get the job and better location for her rotations, which could be fun!
I am starting to have mixed feelings about turning 22. Next Friday I will let you know if anything changes in my life dramatically! My roomies say we can do anything I want! Now I just need to figure out what I want to do. Hmmm? Swim in our neighborhood pool, watch Enchanted, while eating some pita jungle?!? That would be an amazing day!

    Here’s a couple I found that you might be interested in trying!

    Garlic and Red Pepper Humus
    A good, simple recipe that will please your palate
    15 Minutes to Prepare and Cook
    Ingredients
    1 can garbanzo beans, drained
    1 roasted red pepper
    1 tablespoon lemon juice (add more to taste)
    1 1/2 tablespoons tahini
    2 cloves garlic, chopped (add more to taste)
    1/2 teaspoon cumin, ground or seeds
    1/4 teaspoon salt
    Directions
    Add all ingredients together in a blender or food processor. Process until the mixture is relatively smooth.
    To make an easier addition of garlic use the small part of a cheese grater.
    Refrigerate for 1 hour to allow flavors to develop.
    Can be eaten on chips, pita bread, with olive or tomatoes. Make a great addition to a sandwich.
    Makes 8 servings.

    HUMUS
    Ingredients
    1 can chick peas
    1/4 cup lemon juice
    1/4 tahini
    1/4 water
    1/4 tsp salt
    Directions
    BLEND ALL INGREDIENTS UNTILL SMOOTH. Makes 16 (2 tablespoon serving size)
    Number of Servings: 16
